As our 2018 season commences, we are pleased to launch our 2018 wine list – featuring wines that are all produced within 90 mins of Mazamet.

A key part of our ethos is local produce and this is also reflected in our wine list. We buy 95% of our wines directly from vineyards we have personally selected, visited, met the owners and, of course, tasted their wines! The majority of the wines are certified organic (“Bio”) and from low yielding vineyards in private ownership.

The wines of our region reflect the diversity of climates, soils and geography which make up the “terroir” of SW France. From Gaillac, one hour north of Mazamet, to Limoux 75 mins south; the wines we have selected give our guests a taste of some of the best wines which our region has to offer.

The primary wine regions (AOCs) featured on our wine list are the Minervois, Gaillac & Corbieres which are relatively well known – as is Limoux for the wonderful Blanquette de Limoux. Cabardes, Faugeres, Coteaux de Libron are less known, as is Malepere which almost touches the city walls in Carcassonne.

For 2018, we have wines that have been listed from the very first day we opened in May 2009, including Domaine Begude’s wonder whites & pinot rosé to our closest vineyard, Chateau Salitis (just 35 mins away) and their sumptuous “Cabardes” wines.

We have also introduced wines from two new vineyards, Chateau de Caux, sitting on the banks of the Canal du Midi near Carcassonne; and Domaine des deux Anes in Corbieres and just a stone’s throw from the Med (pictured below, “les deux Anes” in person who greeted us on our recent visit)

For guests with a greater interest in wine, beyond enjoying a glass with dinner, we are happy to arrange for a private wine tasting with some of our vineyard partners – just ask us before you arrive and we can make those arrangements for you. (most charge 10€ pp for a tasting, however if you buy a case or more this is waived).
